Prepping food ahead of time has been the #1 one strategy we use to make certain we eat healthy meals and snacks throughout the week. I have said many times it is much easier to eat nutritious foods and control portions when you take the time to prepare food in advance. That way you don’t reach for the easy, cheap solutions when you are stuck. Let’s face it… we all would! Sunday is usually the day where I sit down and plan out the weeks meals and snacks for those busy nights where you get home from work and then have to eat quick before you head off again to get the kids to a class! Trust me… this will make your life a whole lot easier and healthier! So… planning! I map out lunches and dinners by each day based on what that day has in store. Couldn’t wait to get the travel funk out ūüôā It was a great road trip with the fam jam over the Canada Day holiday, but I felt it! Last time I did the Refresh I lost 3.5 pounds and this time was no different.. it got me back on track and eliminated water weight!! On that note, here’s some of my favourite recipes from the meal plan… As Day 1 of the 3 Day Refresh came to an end I was thrilled to find my favourite salad recipe was part of the plan. Maybe you’ll like it too? Cucumber & Tomato Salad INGREDIENTS: (makes 1 serving) 1 Tbsp apple cider vinegar or red wine vinegar 1 tsp balsamic vinegar 2 tsp fresh lemon juice 1 tsp extra-virgin olive oil 1/2 medium cucumber, halved lengthwise and sliced 1/2 cup cherry tomatoes, halved 1 Tbsp chopped red onion 1 Tbsp chopped fresh parsley 1 Tbsp chopped fresh basil leaves 1 dash Himalayan salt Herbal seasoning blend (optional) DIRECTIONS: Combine vinegars, lemon juice, and the oil in a small bowl and mix well. Summer Sizzler Turkey Burgers Ah… SUMMER!!! That time of year when a mans thoughts turn to… BURGERS! YEP! All the burgers! Especially them tasty BBQ burgers! Now. Back a couple of years ago… I was not too picky when it came to burgers. I LOVED them all. BBQ’ed burgers… fast food burgers… any and all burgers! I ate them all and pretty much ALL the time. Hence why I was 70lbs heavier back then than I am now. Don’t get me wrong… I love a good burger. But nowadays I am a bit more picky when it comes to what kind and when I have them. When I started my road to healthier eating… I was not gonna give up burgers. Nope! No way! So I discovered how to enjoy burgers in a healthier way: Turkey Burgers. With a variety of different options! Ground turkey breast is the leanest option in terms of fat so BOOM! Burgers to enjoy. HOWEVER… it is usually what you PUT ON the burger where the extra calories (and not to mention sodium) come into play. Mayo, cheese, ketchup, bacon… MAMA MIA! That can get out of control quick!
