Shannon’s journey over the last year has been tough – she’s struggled with depression and meds that made her weight balloon up to the heaviest she’d ever been, which was all compiled after divorce, the realities of being a single parent of two, starting a new more intense job, and the loss of her step-father…among many other struggles. We knew before we left on a recent family trip to California that we’d be challenged with healthy food options with plans that included airports, tourist attractions, theme parks, and beach boardwalks, but here’s how we made the best of the worst.  Airport Most airports now, especially the bigger hubs, have a variety of options from snack bars and coffee bars, to juice bars, to full on restaurants* – after security. In each location we stopped at, no matter how short the layover, we were able to find ready-to-go meals and snacks like yogurt, trail mix, all the way to salads, hummus and veggies, and fruit cups. We weren’t surprised to then read that according to Women’s Health magazine “… three-quarters of the restaurants at 23 of the nation’s busiest airports offer at least one low-cal, high-fiber, plant-based meal, such as a hummus plate or vegetarian chili…” *The other added bonus we found in American restaurants was a listing of calories for each menu item. This was incredibly helpful when we are at locations from Starbucks to burger joints in knowing exactly what we were getting ourselves into! Theme Park  We were thrilled to see that there are so many healthy options available! At every turn there are healthy packaged options AND fresh options for fruit, salads, hummus, etc. One thing we had to watch was portion sizes… 1 large over-sized apple can equal up to three servings of fruit!   Gearing up to start my first round of 21 Day Fix Extreme! Of course, the best place to start preparing, as I experienced with the 21 Day Fix, was with reading through EVERYTHING… especially the food plan. It’s really well explained, easy to follow and understand, so for people like me who are challenged in the kitchen… it’s a no brainer all around…whew! Of course, I found extra excitement in reading through the Shakeology section where I found unique recipes that have the word CHOCOLATE not only in the title, but in the ingredients, lol! Here’s the thing… the name of the program includes the word EXTREME, so there are some definite restrictions and so for this program I will take all I can get when it comes to the limited supply of treats… and so, although the food plan is chalk full of tasty and amazing looking recipes, the first one I tried was the Chocolate Shakeology Pudding… which as it would be is about as healthy of a treat as you can get 😉 Trust me when I say… it will crush your cravings and packs a punch in only a ½ cup serving. CHOCOLATE SHAKEOLOGY PUDDING 11/2 scoops Chocolate Shakeology (I used vegan chocolate as it’s my FAV!) 1 ripe medium avocado 1 medium banana, cut into chunks 1 cup unsweetened almond milk Instructions: Place Shakeology, avocado, banana and almond milk in blender; cover.
